The special conditions of the area of southern Extremadura, shallow and soil fertility make the "Royal Dehesa de la Serena" (extensive meadows, mountains and large areas of upland grasslands) to provide unique pastures that feed the merino sheep.


It is difficult to determine exactly when it started to be developed this cheese, but since the late middle ages we have knowledge of it. And we continue developing it as our ancestors did.


The cheese began to acquire importance with the fall in price of the Merino sheep: our ancestors their production became the main source of income of the domestic economy of those times and because of the surplus, the large hotels and restaurants in the country, were their export destination.


Nowadays experts and important gourmets consider La Serena cheese as one of the best cheese of sheep in the world, traditional and unique flavor.
